Limeburners is producing Western Australia's first single malts at the time of writing, and they have been doing a mighty fine job of it. The port cask variant is made with Western Australian barley, is copper pot-distilled then matured in an American ex-bourbon cask. It is finished in an Australian-style port cask. Limeburners are non-chill filtered and have no added caramel-coloring, giving them an authentic taste from a sun-burnt country.

His heritage was in fact from Scotland where his family history of distilling took place, so owning a distillery seemed like it was destiny. The distillery is very small by world standards but they like it this way as it helps to spend more time producing quality single malt whisky. Each batch of spirit is produced and bottled by hand which means that they only produce spirit of the highest standard.
The Great Southern Distilleries Standard Single Malts are 43% abv and have been brought down from barrel strength by filtered rain water.
Made and hand bottled at the Great Southern Distillery on the harbour’s edge in Albany, this complex and elegant single malt whisky is distilled in traditional small batch copper pot stills from local barley. This whisky is matured in second fill bourbon barrels and finished in a very old small Port casks. It’s a serious whisky connoisseurs delight, made to savour.
Our Tasting Notes
Nose: Macerated strawberries and raspberry jam. Peppery spice and vanilla bean ice cream. Nutmeg and cinnamon balances with honey sweetness.
Palate: Poached red fruits and malted barley leads to vanilla and honeycomb. Berry jam and a big burst of port.
Finish: Sweet berries and vanilla with a subtle white peppery spice.
