Winemaker Specifics Colour:   A pristine light straw colour with the fine bead rising from the base of the glass. Aroma:   The wine offers a mixed bag to our mind - freshly cut pear, apples and citrus. This is complemented by a butterscotch old-oak like character. Palate:   An interplay of several types of fruit which has been harmonised with yeast like characters which give richness and fullness. There is a savoury character on the finish which is both acid and old oak - compelling one to drink more. Closure:   This Bressecco was bottled using a crown seal closure. Using a crown seal is our attempt to ensure that our...

This Piccolo sized bottle makes the perfect gift. The grapes for this wine were grown throughout Victoria including the cool climate King Valley. The fruit was picked later and at a slightly higher baumé than fruit for our vintage Prosecco to deliver a soft, round and approachable wine.  Winemaker: Geoff Alexander Winemaking notes: After primary fermentation the wine was then fermented in a pressure tank to 5 atmospheres of pressure and bottled to retain...

If variety is the spice of life, then Chandon Brut is a perfectly seasoned little sparkling. A mix of Chardonnay, Pinot Noir and Meunier grapes are all carefully selected from cool climate spots across Victoria, including Whitlands Plateau, Strathbogie Ranges and the Upper Yarra Valley. Out here in wine country, it’s the changes in altitude, age and aspect that can create something deliciously unexpected. The result is a fresh, vibrant finish with hints of apple sorbet, lemon zest, sourdough and nougat. It’s diversity that makes the difference – and luckily for us, we’ve got it in spades.

Pale with green hues. Fruit-driven with hints of green apple and wisteria. It tastes of apple and pear with fresh pithy lemon, gentle creaminess, complete with the very fine bubbles that we call ‘bead’. Fruit is harvested in the cool of night to achieve a balance of fruit freshness and acidity. The wine is pressed and racked to stainless vats for fermentation. The wine is blended and the all important secondary fermentation begins that gives the final bubbles. This second fermentation gives creaminess and texture to the blend, before it is transferred under pressure, complete with bubbles, to bottle.

Dom Pérignon Rosé is one of the great Champagnes, and 2008 is undoubtedly great vintage. James Suckling stated "the 2008 may be the best Dom Pérignon Rosé ever". Dom Pérignon Rosé Vintage undergoes a patient monitoring and slow metamorphosis that requires 12 years, compared to the Vintage (Blanc) which requires 8 years. 59% of pinot noir (11% of red wine) and 41% of chardonnay. Without the red wine of pinot noir, no elaboration of rosé is possible. Over 60 years, there have only been 25 Dom Pérignon Rosé Vintages which have been declared. Not to be missed. Palate:  The initial sensations are tactile, full-bodied and silky as they...

Method Fermented at low temperature to maximise fruit potential and aromatics. We purposely don’t reduce to full dryness because that’s the way, ah-hah, ah-hah, we like it, ah-hah. Results A warmer climate twist on the traditional. Think Sauv Blanc with a tropical undertone. Lively and aromatic with green herbs, gooseberry, white peach and grapefruit flavours. Off-dry with juicy acidity for a full, round finish. Conclusion Heathcote’s warmer climate expresses ripe stone-fruit flavours in Sauvignon Blanc. Just for fun, we have created a faintly sweet little franken-fruit monster – charming S.B and non-S.B drinkers alike....

The Durif grapes for this wine come from a small vineyard that Sam helped establish in the 1980s. It’s now at peak maturity.
