Dom Pérignon Rosé is one of the great Champagnes, and 2008 is undoubtedly great vintage. James Suckling stated "the 2008 may be the best Dom Pérignon Rosé ever". Dom Pérignon Rosé Vintage undergoes a patient monitoring and slow metamorphosis that requires 12 years, compared to the Vintage (Blanc) which requires 8 years. 59% of pinot noir (11% of red wine) and 41% of chardonnay. Without the red wine of pinot noir, no elaboration of rosé is possible. Over 60 years, there have only been 25 Dom Pérignon Rosé Vintages which have been declared. Not to be missed.

Palate: 

The initial sensations are tactile, full-bodied and silky as they unfold like a caress, gradually becoming bolder. The acidic foundation that is the signature of the vintage weaves into the structure of the pinot noir, vibrating the heart of the wine. The affirmed, persistent finish is redolent of peonies and white pepper.

Food Pairing:

The vibrant structure of the wine is unveiled when accompanied with seafood such as an elegant langoustine paired with hummus or with a devilled egg, Prunier caviar and raw asparagus salad. Paired with meat, for instance a charred Waygu beef sashimi with chilled spiced turnip greens.
