Producer Background:
Holyman Wines is recognized for its commitment to creating premium wines that express the unique characteristics of the Tamar Valley’s cool climate and diverse soils. The winery focuses on sustainability and minimal intervention winemaking, allowing the natural qualities of the fruit to shine.

Vintage Notes:
The 2023 vintage in Tasmania was marked by ideal growing conditions, with a warm summer followed by cooler nights that allowed for slow ripening. These conditions contributed to the development of ripe, concentrated flavours while maintaining the crisp acidity essential for Chardonnay.

Vineyard Notes:
The Tamar Valley’s cool maritime climate and varied soil types provide optimal growing conditions for Chardonnay, allowing the grapes to develop characteristic complexity. With careful vineyard management, the fruit produced is both vibrant and expressive.

Winemaking Notes:
After hand harvesting, the grapes are gently pressed, and the juice is fermented with wild yeasts in a combination of stainless steel and French oak barrels. This process aims to enhance the wine’s complexity while ensuring a fresh fruit character. The wine typically undergoes a period of ageing on its lees, adding depth and creaminess to the final product.

Flavour Profile:

  • Appearance: Pale straw yellow with bright, golden highlights, suggesting vibrancy and youth.
  • Nose: Aromas of citrus fruits, such as lemon and lime, intertwined with notes of stone fruit, subtle oak, and a hint of minerality, creating a complex and inviting bouquet.
  • Palate: Medium-bodied and well-balanced, featuring flavours of ripe peach, green apple, and a touch of vanilla, backed by refreshing acidity and a long, elegant finish.

Food Pairings:
Enjoy the Holyman Chardonnay 2023 with:

  • Seafood: Pairs beautifully with dishes like grilled fish, scallops, or seafood pasta, enhancing their delicate flavours.
  • Poultry: Excellent with roasted chicken or turkey, complementing the richness of the dish.
  • Creamy Dishes: Works well with creamy pastas or rich risottos, providing a delightful balance of textures and flavours.
