Producer Background:
Hughes and Hughes is a dedicated artisan winery committed to natural winemaking practices that celebrate Tasmania’s unique terroir. Focused on minimal intervention, they aim to produce wines and sparkling beverages that are expressive, unmanipulated, and true to their origins. Their philosophy centers on transparency, purity, and embracing the wild beauty of their environment.
Vintage Notes:
The grapes for Dunkel Spritz are harvested at optimal ripeness, capturing vibrant fruit flavors and natural acidity. The primary fermentation process is carefully managed to produce lively bubbles while maintaining the wine’s natural integrity. The result is an authentic pétillant naturel that embodies freshness and character.
Vineyard Notes:
From the White Rock vineyard, the Dornfelder and Riesling grapes benefit from Tasmania’s cool climate and mineral-rich soils. These conditions foster slow, balanced ripening, preserving bright fruit flavors and natural acidity, which contribute to the wine’s lively profile and complex depth.
Winemaking Notes:
Grapes are pressed gently and fermented in the bottle during primary fermentation to create natural carbonation—known as pétillant naturel. The wine remains unfined and unfiltered, enhancing its wild, rustic charm. No sulphur is added, allowing the true expression of the grapes and terroir to shine through, resulting in a spontaneous, effervescent drink with a crisp, clean finish.
Flavour Profile:
- Appearance: Deep garnet with a lively, persistent sparkle.
- Nose: An aromatic burst of bright red berries, plum, and subtle floral notes, complemented by hints of spice and earthiness.
- Palate: Vibrant and refreshing, with flavors of ripe cherries, dark berries, and a touch of citrus zest. The natural bubbles add a lively effervescence, while the unfiltered texture provides a gentle, tannic grip that balances the fruit’s richness and mineral undertones.

Enjoy Hughes and Hughes Dunkel Spritz with:
- Seafood: Oysters, sashimi, or light seafood salads.
- Charcuterie and Grazing Platters: Soft cheeses, cured meats, and antipasto.
