Crafted from early-harvested grapes (11–12° Baumé), the Riesling, Chardonnay, and Dornfelder are pressed gently and bottled during primary fermentation to preserve their natural sparkle. Unfined, unfiltered, and made without any added sulphur, this Pet Nat embodies Tasmania’s wild, expressive character with a light touch of fermentation complexity.
Producer Background:
Hughes and Hughes is a dedicated artisan winery committed to natural winemaking practices that highlight Tasmania’s unique terroir. Their philosophy revolves around minimal intervention, transparency, and celebrating the unfiltered, wild beauty of their environment. Their approach results in expressive wines and sparkling beverages that are true to their origins.
Vintage Notes:
The 2025 vintage saw grapes harvested at optimal ripeness, ensuring a harmonious balance of bright acidity and flavour. The primary fermentation process is carefully managed to produce fine, natural bubbles while maintaining the integrity of the grapes’ fresh, lively character. The result is a sparkling wine with a gentle effervescence and a refined, savoury edge.
Vineyard Notes:
From the fertile soils of Tasmania’s Derwent Valley and North West, these grapes benefit from a cool climate that fosters slow, balanced ripening. The mineral-rich soils contribute depth and complexity, enhancing the wine’s vibrant citrus, floral, and stonefruit notes.
Winemaking Notes:
The grapes are pressed with care, and fermentation occurs in the bottle during primary fermentation—known as pétillant naturel or Pet Nat—creating natural carbonation. The wine remains unfined and unfiltered, allowing its wild, rustic charm to shine through. No sulphur is added, so the natural wild yeasts and flavours are preserved, resulting in a sparkling wine that is lively, refreshing, and full of character.
Flavour Profile:
- Appearance: Bright straw with a lively, persistent sparkle.
- Nose: A fresh burst of citrus blossom, white florals, and subtle hints of stonefruit.
- Palate: Light, crisp, and refreshing with flavours of zesty lemon, apple, and a touch of savoury complexity. The fine bubbles add a delicate sparkle, while the unfiltered texture provides a soft, savoury grip that balances the fruit’s brightness and mineral undertones.
Food Pairings:
Hughes and Hughes Soirée Pet Nat 2025 is perfect for celebrations or casual gatherings.
Pair it with:
- Light seafood dishes: Oysters, sashimi, or seafood salads.
- Cheese and charcuterie platters: Soft cheeses, cured meats, and antipasto.
- Fresh salads: Citrus, herb-infused, or stonefruit salads.
- Spicy dishes: Thai, Vietnamese, or other Asian cuisines that benefit from its bright acidity.
