Where it all began

Tequila has a long and storied history, dating back to the 16th century. At first, tequila was used primarily as a medicinal tonic, but it soon became a popular drink among the colonists. By the early 1800s, tequila had become firmly established as a staple of Mexican culture. 

This popular Mexican spirit is made from the fermented juice of the blue agave plant, and has become known for its distinctively smooth flavour. While tequila is often associated with party culture and festive celebrations, there is much more to this complex beverage than meets the eye.

In 1873, Don Cenobio Sauza, founder of Sauza Tequila, became the first person to commercially bottle tequila. Around this time, tequila began to gain popularity outside of Mexico, particularly in the United States.

What is it?

Tequila is a distilled alcoholic beverage made from the blue agave plant in Mexico. The drink is most commonly associated with Mexico and Mexican culture, but it has become popular around the world in recent years. Tequila is typically drank neat, but can also be used in cocktails.

Tequila is often made with other ingredients besides agave, including water, yeast, and sugar. However, 100% agave tequila is considered to be the highest quality and most authentic type of tequila.

Different Types of Tequila: Silver, Gold and Reposado

When it comes to tequila, there are three main types: silver, gold and reposado. 

  • Silver tequila is the most popular type and is known for its smooth taste. It is made from 100% blue agave and has a light, fruity flavour. 
  • Gold tequila is also made from 100% blue agave, but it is aged in oak barrels for a minimum of two months. This gives it a richer, more complex flavour. 
  • Reposado tequila is aged for a minimum of two months, but can be aged for up to one year. This type of tequila has a smooth, mellow flavour with hints of oak.

Pairing Tequila with Food

When it comes to pairing tequila with food, there are a few things to keep in mind. First, tequila is best enjoyed when sipped slowly, so take your time and savour the flavours. Second, because tequila is made from agave, it has a natural sweetness that can be enhanced by pairing it with foods that have a bit of acidity or spice. And lastly, don't be afraid to experiment – the world of tequila is full of surprises!

Here are a few ideas to get you started:

  • Tequila and Sushi – The light, fresh flavours of sushi are a perfect match for tequila. Try pairing silver or blanco tequila with tuna or salmon rolls, or go for something a little different and try reposado tequila with eel.
  • Tequila and Mexican Food – Of course, tequila pairs well with Mexican food! The key here is to find a balance between the two flavours. For example, try pairing a spicy dish with a smooth blanco tequila, or offset the heat of enchiladas with a fruity anejo.
  • Tequila and grilled meats – The smoky flavour of grilled meat.
