A modern whisky, full matured in a unique first fill Australian Apera barrel. Distinctly Starward, this whisky speaks to the place it's made - Melbourne. Non-chill filtered and bottled at cask strength.

Whisky Character: Glazed Peach, Toffee & Brioche.

Tasting Notes:

Nose: Full-bodied, unctuous. The pleasantly chocolate first nose is also characterized by notes of polish (beeswax), apricot, orange, verbena and juniper. Allowed to breathe, iris butter provides a particularly concentrated and heady signature. Note a lovely bitterness that evokes citrus fruit and cocoa powder. Gradually the nose becomes increasingly medicinal and camphoric.

Appearance: Topaze.

Palate: Svelte, invigorating. Mentholated and for its part characterized by a beautiful bitterness (cinchona), the attack wavers between noble spices (cardamom, curry), orange blossom, rose petal and cinnamon. The fruity register gradually takes the clear upper hand with orange, apple, Mirabelle plum and greengage plum. A wonderful herbal tea aftertaste (bay leaf, orange blossom liqueur).

OverallLong, rich. At the start of the finish, it is impossible to choose between peach tart, strawberry tart and Black Forest gateau, and the best option is to take them all. Outstanding. This is followed by a very pleasant herbaceous (tobacco), spicy (ginger, cinnamon) and tertiary (lichen, chestnut) sequence. The retro-nasal olfaction is softened by notes of latte and lavender honey. The empty glass is delicately woody, floral (iris) and chocolatey.
