Alcohol Policy

Buyers must be at least 18 years old and located outside a designated dry zone to purchase alcohol.

Our Old & Rare Second Fill American Oak releases have been matured for a minimum of sixteen years in a cask made from American oak, that has previously matured Sullivans Cove whisky.

Second fill casks display our distilleries character loudly and proudly. These casks have been with us since the mid 1990s where they started their life as virgin oak, and they have only ever matured our single malt whisky – no bourbon, no sherry, nothing else. Second fill casks allow for long term maturation, without being overtaken by the influence of oak or pre-fill. The result is a whisky in perfect harmony: our signature spirit character is met by a soft oak profile, allowing the fruity esters that come from our copper Alembic still, Myrtle, to shine.

Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager.

"As the fresh tropical pops of Sullivans Cove spirit morph into one with the sweet, creamy depth of American oak, you realise you have just received a lesson in integration, brought to you by 16 years of gentle maturation in the right oak for this spirit. Layers upon layers of complexity and flavour, with no out-of-line dryness, grip or tannin to speak of. Divine."

Tasting Notes:

Nose: Tropical pops of juicy fruit are EVERYWHERE. A ripe and syrupy nose opens with lemon peel and white flowers (jasmine and frangipani), pineapple rings and mango pulp. A pineapple and coconut note then leads into floral peach syrup, almond and sunflower seeds with a wave of sweet hazelnut cream. Spirit forward in its bright and tropical fruity character, with wrappings of American oak in all the right places creating depth and creaminess. Pina Colada anyone?

Palate: Signals of sweet vanillin and crème de menthe take us to the palate while herbal and sweet qualities derived from the oak add layers of complexity to a bright and tropical spirit character. Pine-lime ice cream (Splice) meets macadamia and lemon starburst lollies, moving to more tropical confectionary: yellow rock candy, passionfruit coulis, lemon curd and vanilla yogurt, before resting atop a malty base of Ovaltine and a lightly grippy, pine-like oak profile.

Finish: With a subtle and very well-integrated grip of oak, a light prickle of spirit transitions all of the creamy, tropical, lemony delights smoothly from the palate to the finish, and the citrus amps up. Grapefruit, passionfruit, and lemon sherbet meet caramelised white chocolate and a dark, earthy sweet note (dates in syrup). With incredibly generous length, the finish keeps on giving long after the last sip. Red apple skins and apricot candies covered in coconut tail off leaving two classic notes of Sullivans Cove spirit: salted liquorice and lavender.
