Tasting Notes The beginning fragrance is substantial, biscuity and grainy sweet; the smell at that point turns out to be more sugar bread like and a touch salty. Sense of taste passage finds liberal and malty-sweet flavors; by midpalate particular notes of dark pepper, kelp, oaky vanilla, nectar and dull caramel are included. Completes carefully, sweetly and malty, with only a scarcely discernable impact of the ocean.   .

It is very much an Irish malt in every step of its character. The peaty Irish in the squat, green bottle carries a 40% abv and no age statement (NAS). The coloring is rich, solid gold, while the nose combines heather and meadow wildflower scents with a honeyed sweetness, tinged with a dash of cinnamon, with a current of smoke running straight through it. This release sees Cotswolds' creamy, fruity new-make filled into American oak STR barriques for just over three years. The Master Blender selected nine for the final cut. The inaugural batch was dedicated to industry legend, Dr. Jim Swan, who encouraged Cotswolds to shave, toast, and re-char red wine barriques. Subsequent batches have followed. The highly active casks were finally disgorged and bottled at natural cask strength, non-chill filtered and with no added colouring.
