About Us

Uisuki was founded through a deep love for and an invested interest in fine spirits, particularly that of whisky. We found our roots in 2013, originally trading as a whisky distributor exclusive to Japanese malts and Japanese spirits more broadly – including sake and gin. With connections to 18 of the 20 most popular active distilleries in Japan at the time, it wasn’t long before we expanded our reach.

Over the last decade, we have been working tirelessly to bring you the best malts from all across the world. From the highlands of Scotland to the valleys of Tasmania, and the Bluegrass country of America, we’ve sourced every bottle worth knowing about, so you too can enjoy the best of the best.

Up until now Australian Whiskey has been largely influenced and led by the Scottish whisky industry, from production processes through to still design.

78 Degrees wanted to create something different, something uniquely Australian. When Sacha La Forgia set out to create a whiskey, his drive was not to replicate but to innovate. Rather than study existing styles, Sacha worked on developing something different, something that reflected Australia, both in its modern form and its tens of thousands of years of history.

It was through his desire to create a product with a uniquely Australian flavour, that Sacha was driven to research and develop a whiskey that didn’t just replicate something that already existed, but carved out its own place in the market.

With sustainability at the forefront of his mind, Sacha set out to create a truly considered Australian whiskey. Each step of the process has been thoroughly researched, with an emphasis on flavour through sustainable practices.

So, what does sustainability look like? From rainwater fed, GM free barley from our very own field, the utilization of an unmalted barley base, along with 11 flavouring malts, in order to limit energy and water consumption, fermenting and distilling on grain as not to waste water on rinsing, to their unique single-shot distillation method, every step of the process has been carefully considered and carried out to ensure that they create a delicious whiskey, with a truly considered Australian style.

78 Degrees  believe that to be truly sustainable you have to not only control your own processes, but the processes of those around you. It is important for them that we maintain control of their  materials throughout.

78 Degrees are able achieve this through a locally grown, single paddock barley, which is 100% rain water fed, GM free and utilizes the waste material of our distillation process as a natural pesticide, making it truly closed loop.

They also hand select all of our casks, ensuring only the finest oak is used to mature our spirit. Through these processes we are able to maintain complete barley to bottle control over every single drop of our 78° whiskey.
