The green apple flavours carry through to the palate with lemon citrus notes accompanied by the soft creaminess and a delicate and refreshing acid on the finish. add complexity. Food Pairing Salty foods like oysters, caviar or sushi : the delicate taste of these dishes can be balanced by the tangy dryness of an Extra Brut Champagne. Method Fermented at low temperature to maximise fruit potential and aromatics. We purposely don’t reduce to full dryness because that’s the way, ah-hah, ah-hah, we like it, ah-hah. Results A warmer climate twist on the traditional. Think Sauv Blanc with a tropical undertone. Lively and aromatic with green herbs, gooseberry, white peach and grapefruit flavours. Off-dry with juicy acidity for a full, round finish. Conclusion Heathcote’s warmer climate expresses ripe stone-fruit flavours in Sauvignon Blanc. Just for fun, we have created a faintly sweet little franken-fruit monster – charming S.B and non-S.B drinkers alike....

This wine, dear to our heart, under Père Anselme signature, was created in 1952 by Charles Brotte with the  co-operation of local Provençale glass and ceramic craftsmen. The original and surprising bottle shape represents the gnarled and twisted vines typical of the region due to their struggle of growing against the Mistral wind. La Fiole, “Phiala” in latin refers to a “precious bottle”. The bottle is exclusive as we are the only winery permitted to use this shape. “Pape” evokes the cru of Châteauneuf-du-Pape as well as the   presence of the Popes in the region and village in the Middle Ages.
