Its aging highlights the purity of the Nebbiolo grape. Its ideal drinking period is within the first five years after bottling, when it best develops the aromas of rose and small, red fruit. Serve at 16-18° C (61-64° F). WINEMAKING: Crushing-destemming is followed by spontaneous alcoholic fermentation using indigenous yeasts. It is left in contact with the skins in stainless steel tanks at a controlled temperature, followed by dry racking and cold decantation.
